Be Creative with Quiche - Fun Recipes

Gluten Free - Dairy Free - Low Carbohydrate - Good Tasting!

What more can you ask of a meal?

Coconut milk makes this quiche creamy. You won’t miss the dairy cheese.

Optional: 1 8- or 9-inch gluten-free, dairy-free piecrust, unbaked

6    strips of bacon, fired and crumbled
2 Tbs    butter substitute and/or Coconut Oil
4    Eggs
1 can    Coconut Milk (not light)
2 Tbs    Atkins Baking mix or Soy flour
1/8 tsp    salt
2 tsp    baking powder
2 Tbs    crumbled goat cheese*
2 Tbs    chopped onion
4    mushrooms, sliced
2 c    cubed sharp cheese and/or grated cheese**
1/3 pkg    thawed chopped frozen spinach (about 1/3 lb) ***

Preheat oven to 400. 
Fry the bacon.  Melt the butter.  Whisk together Coconut Milk, Eggs & Oil until fluffy. 
Stir in flour, baking powder, salt and cheese.

If using piecrust, do not bake first.  
 Layer bacon, mushrooms, onion and half the spinach in a greased 2 qt casserole or non stick baking pan.  Add half the egg mixture. Add the remaining spinach and egg mixture.

Bake at 400 for 15 minutes, reduce the temp to 350 - Top with crumbled cradkers and bake for 20 minutes or until a knife inserted in the middle comes out clean. 
Optional: Serve  with Hollandaise Sauce (recipe below)

*    Feta, Gorgonzola or cream cheese
**    Swiss, Cheddar, Parmesan, jack or blends, cubed or shredded
***     3 cups chopped vegetables (leeks, sweet bell peppers, zucchini, asparagus, broccoli, kale, etc.  Some vegetables may need a little 'pre' cooking.)

Other variations: seafood - crabmeat, shrimp, seafood sticks of salmon, cayenne pepper, dried mustard, parsley or pimento, chives

Hollandaise Sauce
Separate 3 eggs. (Egg whites are not used)  Add 1 or 2 Tbs lemon juice to the egg yolks.
Clarify butter - bring 1 stick (1/2 c) of butter substitute to a boil. 
Whip butter into Egg yolks.
Microwave for a few seconds for a thicker sauce.  Sauce will thicken as it stands.

The #1 way you can increase your chance of dying

The headline of the article, published in Women'sHealthmag.com, is: "Fructose Intake Linked to Slightly Higher Risk of Death".  The article is by Laura Tedesco and refers to a new study published in The American Journal of Clinical Nutrition.

Laura says that "Women who eat the most sugar have a 10% higher risk of dying from any cause, compared to the average person".  I wonder, since when is 10% a slight risk?  If it happens to you, it is 100%.

There are many studies linking fructose (which is about 50% of sucrose) to a variety of problems, such as cancer and heart disease.  But those who consume high quantities of sodas, sports drinks and fruit juices are at greater risk.

Recently our Nutritional Consultant, John W Jones, MD, MPH, reported on a world wide link between Non-Alcoholic Fatty Liver Disease and increased intake of high fructose corn syrup.  The  study that links fructose intake to death proposes that sugars from beverages are rapidly absorbed, resulting in significant blood sugar spikes.

I postulate that this blood sugar rise mimics the high from alcohol consumption...

The article in Woment'sHealthMag identifies some common sources of fructose.  Besides fruit juices and soft drinks, check out the sugar (carbohydrate) content of preserves, applesauce, dried fruit (Craisins) and candy.

For years Dr Jones has encouraged patients to adopt the Low Carbohydrate Lifestyle Modification.  There are several good clinical studies that indicate that this diet improves ALL of the cardiovascular risk factors, despite the amount of fat in the diet.  The ideal carbohydrate intake per day is about 40 grams (forget counting calories).  He encourages people to read labels and obey serving size recommendations.  It doesn't matter whether you choose to eat a candy bar or a small Jamba Juice Banana Berry Smoothie, you just ingested 2 or 3 days worth of carbohydrates - and are limited to 0 carbohydrate foods for the next few days.  That's my way of trying to make a point.

The problem is that it is very easy to incorporate a lot of sugar into our daily diets.  And the intake from seemingly 'healthy' sources can be quite high.  Switching to artificial sugars may also be dangerous - especially if your intake of sweet liquids remains high.   Our article called Sweet Poison describes one person's severe health problems which were traced to Aspartame in her pop.

Ah, habits are so hard to break.

So, you believe your diet is really good, and that you meet all your nutritional needs eating the way you do?

WRONG IDEAS
A popular misconception held by both the lay public and the medical profession is that the American diet supplies sufficient levels of all the nutrients needed by the body.   In reality, the western diet is characterized by imbalances and excesses.   In addition, there are unknown consequences from the GMO food supply.   Telling a person “all you need to do is eat right” does not take into consideration the American lifestyle, problems associated with our food supply, or human nature.


Two nationwide food consumption studies conducted by the USDA found that approximately 60% of the individuals surveyed were consuming only 70% of the daily minimum requirements of six essential nutrients.   Those surveyed were people who made an effort to eat (and thought they were eating) a balanced diet.   The nutrients are: vitamin B6, folacin, zinc, copper, calcium and magnesium.   With these facts in mind, it is not likely that anyone is consuming an optimal supply of nutrients ... without supplementation.   

More food for thought.

Are there consequences if you are not eating at least 1100 Calories of Nutrient Dense Food?   What are the MDRs (Minimum Daily Requirements)?   They are also known as the RDA and sometimes called the RDIs.  Do they apply if you are Pregnant or Lactating?  How about if you perform heavy manual labor - and do it under extremes of temperature?   Do pregnant women (and those who think they might become pregnant) really Have To Have at least 400 IU folic acid?   And how about the very young - the very old  - or the very ill?    How does poverty figure into food choices (what do folks really buy with those 'food stamps'?) 

So, what does Dr Jones recommend?

  • Don’t wash your face too often.   Each time you cleanse, oil and moisture are also washed away. 
  • Using natural cleansers help your skin maintain it’s delicate moisture balance. 
  • Avoid extremely hot water which is damaging to delicate tissues.  Comfortably warm water is sufficient to soften your skin for more thorough cleansing. 
  • Use caution when showering.  Long hot showers feel wonderful, but keep in mind - your scalp, face, and entire body are being exposed to chlorine and other harsh chemicals.  The hotter the water, the greater potential damage.  And consider using a non-soap, pH balanced Body Wash.
  • Toners are an important step for optimal skin care.  Their purifying, anti-bacterial ingredients destroy harmful bacteria and remove residue of chlorine and other harsh, drying chemicals found in tap water.    The phyto-rich nutrients in our toners, nourish and help balance the acid mantle, vital to healthy skin.   Applying toners to the T-Zone with a cotton ball helps to deeply clean and refine pores.
